White Chocolate Coconut Cookies

These are by far the best cookies I have ever tasted.  Do you like coconut?  You'll love these!  Do you like white chocolate?  You'll adore these!  These are amazing little bits of heaven.  Of course if you have read any of my blogs you will not be shocked that I altered the recipe.  I added more vanilla than the recipe called for  because I love, love, love vanilla.  And I added a bag of white chocolate chips. 
You'll Need:
1/2 cup softened butter
1/2 cup sugar
1/2 brown sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 1/3 cup coconut
1 bag white chocolate chips
Preheat oven to 350.  Cream butter, sugar and brown sugar together.  Add the egg and vanilla.  Next add the flour, baking soda and salt.  Finally add the coconut and white chocolate chips.  Line your cookie sheets with parchment paper.  Spoon dough by the spoonful and roll into small balls.  Place in oven and bake for 9-13 minutes.
