Baked Beef Taquitos with Guacamole Dip

I've been pinning many recipes for chicken taquitos on Pinterest lately.  Although I'm sure the chicken taquitos are superb I've been craving beef.  I decided to throw some beef taquitos together and they turned out awesome.
Preheat oven to 425 degrees.
FOR THE BEAN MIXTURE
~1 can black beans drained and rinsed
~3 oz light cream cheese
~1/4 tsp chili powder
~1/4 tsp cumin
~1/4 tsp paprika
~1/4 tsp pepper
~2 tbsp salsa
Mix above ingredients in Cuisinart food processor until just mixed.
FOR THE MEAT MIXTURE
~1 lb lean ground beef
~2 tbsp Worshestershire sauce
~1/2 tsp pepper
~1/2 tsp garlic salt
~1/2 cup water
Cook beef thoroughly.  Drain.  Mix ingredients and continue cooking until all water is absorbed.
~10-15 corn tortillas
~2 cups shredded cheese
Cook in pan turning often on medium heat.
Begin to assemble your taquitos with the meat.  Add about 2 tbsp meat.
Add about 1 1/2 tbsp of the bean mixture.
Add 1 tbsp shredded cheese.
Fold over largest open area of tortilla and pull ingredients into roll.
Then continue to roll as tightly as possible.
Line a cookie sheet with parchment paper.  Place rolls with opening face down.
Place in oven and cook for about 10 minutes and them turn them over.
Cook until golden brown.  Remove from oven and allow them to cook slightly before serving.
Serve with salsa, light sour cream or guacamole.
FOR GUACAMOLE
~1 ripe avocado
~2 tbsp salsa
~1/2 lemon squeezed
~1/4 tsp pepper
~1/4 garlic salt
~1/2 cup light sour cream

Stuffed Peppers

Wash and cut tops off of bell peppers.  To make pepper sit up correctly you may have to take a small portion off the bottom.
3-6 bell pepper any color
1 lb of ground turkey, hamburger or sausage
1 cup shredded cheese
1 can of corn
1/2 of a purple onion, diced
1 cup of white rice
1 tsp garlic salt
1 tsp cumin
1 tsp dill
1 tsp paprika
2 1/2 cups of water
 1 tbsp olive oil
1 small can of tomato sauce
Turn oven on to 375 degrees.
Add olive oil to skillet over medium heat.  Add rice to olive oil and brown.  Once browned, add 2 1/2 cups of water, cumin, garlic salt, dill and paprika.  Mix thoroughly.  Cover and stir occasionally until all water is absorbed and set aside.  Brown the meat with the onion diced.  On this recipe I actually thought I was setting out ground turkey, but ended up being sausage.  I turned out to be really tasty!  Once meat is browned, add rice mixture, corn (drained) and tomato sauce.
Now stuff the peppers to the top and place in an oven safe baking dish with pam sprayed on the bottom.  I also added about 1/2 cup of water to the bottom of the dish to add some moisture.  Cook for 25 minutes.
Take out of oven and add some shredded cheese to top and place back in oven for an additional 5 minutes.
Enjoy!!

Tostadas

You need:
Tostada shells
1 lb lean beef
1 tbsp taco seasoning (recipe found here)
Shredded cheese
1 can black beans
1 can refried beans
tomatoes
Preheat oven to 350 degrees.  The tostada shells I use to not say to cook them but I warm them before topping them.  Cook the beef and then add the black beans, taco seasoning and about 1/2 cup of water.  Cook until all the water is absorbed.  When warming the refried beans I add about 2 tbsp of water to make the beans a little easier to spread on the tostada shell.
To top you shells spread the refried beans, beef mixture, cheese, lettuce and then you tomatoes.  You may top yours with sour cream or salsa.  Or you may add them amazing sauce that my mom use to make.  Click right here for the recipe.
Here are my boys enjoying some yumminess.

Stuffed Croissants

Are you looking for a hearty but quick meal?  Well look no further, it's right here.  Tonight while trying to figure out something to make for dinner, I just started adding things to my pan and this is what I got for dinner.
2 rolls of croissant rolls (8 croissants per roll)
1 lb ground turkey (Beef would work)
6 eggs
1 can chili beans (not chili con carne, just chili beans)
1 cup chopped mushrooms
1 cup shredded cheese
Salt & Pepper
Preheat oven to 350 degrees.  Cook turkey until no longer pink.  Add salt and pepper to taste.  Add mushrooms and continue cooking till they are tender.  Add the can of chili beans.  Cook for another five minutes then add your eggs directly to the meat mixture.  Cook until eggs are completely cooked.
Open croissant package.  Press together two croissant rolls to make the shape of a rectangle.  Be sure to press firmly on the precut line where the croissants would normally separate.  Let the meat cool slightly before adding it to the top of the rolls.  Add a spoonful of the meat mixture to the center of the rectangle.  Also add some shredded cheese.
Bring both side to center and press dough together and on ends to completely close the roll.
Put in oven for 25 minutes.  Pull out and add some cheese to top and cook on broil for an additional 5 minutes.
These would be great stuffed with just about anything you could think of.  I think next time I'll try them with some sort of fruit and maybe a jelly.
I think they would be fantastic with whatever they are stuffed with.

Loaded Burgers

So a few nights ago I found this great picture of burgers wrapped in bacon and pineapple on pintrest.  I thought this was a perfect opportunity to include my amazing homemade burgers.
1 lb 93/7 ground beef
1 egg
2 tbsp tarter sauce
1 tsp dill
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp ground cumin
1/4 cup Italian bread crumbs
4 slices pineapple
8 strips turkey bacon
Mix all ingredients together in beef with your hands.  Patty up into four burgers.  Place a slice of pineapple in the middle of a patty.
Wrap two slices of bacon around the patty.  Gently press into beef on underside.  Cook burgers on a medium heat.  Place burgers on grill with the pineapple up first for ten minutes.  Flip after ten minutes and cook an additional ten minutes.
These turned out really wonderful!  These will defiently become a favorite in our home.

Hearty Beef Stew

1 lb lean ground beef
1/2 purple onion
1 can corn, drained
1 can black beans, undrained
2 small cans tomato sauce
1 can diced tomatoes
3 cups kale
3 cups uncooked whole wheat rotini pasta
3 tbsp brown sugar
1 tsp garlic salt
t tsp thyme
1 tsp oregano
3 tbsp ketchup
3 tbsp mustard
2 packages onion soup dry mix
8 cups water

This was a very delicious and filling stew.  Hubby said it was my best stew yet.
I hope it turns out great for you.
First, get your 8 cups of water on the stove.  Once your water is boiling add your two packages of onion soup mix.
Chop half of a purple onion.
I heard once that onions will only make you cry if you're cutting with a dull knife.
Have you ever heard that?
Wash your kale in cool water.  Next pull the stem out of the center and then chop the kale in larger chunks.
Brown your hamburger and add your onions.  Cook for about 5 minutes to soften the onions.
Next add the hamburger to your water with the onion mix.
Add all ingredients to boiling water except pasta.
Boil on medium for about 20 minutes.
Add the pasta and cook for an additional 20 minutes.
Let me know what you think.

Homemade Tacos

These are amazing, good for you and oh so fast.  Yummy tacos.  My family and I eat tacos about once a week.  We LOVE them!  Here's my easy recipe for tacos.
What you'll need:
1 lb ground turkey or lean beef
1 can diced tomatoes (not drained)
2 bell peppers
1 can black beans (not drained)
1 1/2 tbsp taco seasoning (see recipe here)
9 corn or flour tortillas
Olive oil
1 cup sharp shredded cheddar cheese
1/2 water
Brown the turkey or beef.  When the meat is almost cooked add the bell pepper chunks.  When the meat is fully cooked add the black beans, canned tomatoes, taco seasoning and water.  Simmer mixture over medium heat for about 20 minutes.  Mixture will seem very watery but all liquid should be absorbed in that 20 or 25 minutes.  If using corn tortillas, heat 1 tsp of olive oil and place one tortilla in pan, warm both sides and place on paper towel.  Cook the remainder of the tortillas.  Add some of the meat mixture and top with cheese.
Serve with a fresh salad and top the salad with a sweet salsa.
It's amazing!!!
Enjoy.
