Who remembers the Cedar Rapids floods of 2008 in Iowa?</div>
<div style="text-align: center;">
These events were life changing for many Iowans. </div>
<div style="text-align: center;">
It was a very devastating experience for many.<br />
The waters crested at I believe 23 feet. It was crazy to say the least!</div>
<div style="text-align: center;">
Fortunately we were still living in an apartment when the floods occurred.</div>
<div style="text-align: center;">
Once the water had subsided, there were many, many damaged homes that were beyond repair.</div>
<div style="text-align: center;">
The house we bought actually had water that filled the basement and made it's way onto the first</div>
<div style="text-align: center;">
floor and rose until it reached about 18 inches.</div>
<div style="text-align: center;">
Our home was built in 1900.</div>
<div style="text-align: center;">
Shawn and I just love the character of older homes.</div>

We lived in this house for a little over three years. We did much of the work inside of the house before we moved in. The outside of the house was a different story. It was not until we decided to list the house for sale that we decided to re-side the house. Our intentions weren't always to re-side the house, but you know, life gets in the way. It just always seemed to be pushed to the back burner.<br />
Siding this home was quite the feat.<br />

The first side of the house is done. The porch has just had the old siding removed and is waiting for blue board (a type of insulation) to be put up.<br />

I would like to begin by saying that there is no way that I am ever going to be able to catch up on the months and months of blogging that I have not done. My world has been turned upside down, shaken, and gently set back down since my last post. My life was just set down in a little bit of a different area...Central Point, Oregon. Whoa!! That's a long ways from Cedar Rapids, Iowa. About 1,930 miles. So this is what has been going on...</div>

Shawn and I sold our house on Mallory Street. Can you believe that we sold our house after only nine days of being on the market. Praise the Lord and may His will be done in our lives. And if you can believe this, we got asking price and the buyer bought all of our furniture.</div>

September 11, 2012 finally came and I graduated Kaplan University with my Licensed Practical Nursing diploma. Wow! And my final semester at Kaplan I achieved straights A's. This was a major accomplishment for me. </div>

</div><div class="ing-content print-yes" style="text-align: center;">For The Filling & Topping</div><div class="ing-content print-yes" style="text-align: center;">¾ cup heavy cream</div><div class="ing-content print-yes" style="text-align: center;">3¼ cups confectioners sugar</div><div class="ing-content print-yes" style="text-align: center;">1½ cups softened unsalted butter</div><div class="ing-content print-yes" style="text-align: center;">1 cup peanut butter<br />
1 tbsp vanilla extract<br />
Pinch of salt</div><div class="ing-content print-yes" style="text-align: center;">A bag of mini peanut butter cups cut in half</div><div class="ing-content print-yes" style="text-align: center;"><br />
</div><div class="ing-content print-yes" style="text-align: center;">Preheat oven to 350. Spray Pam on the sides of 3 8 inches pans. In bowl combine cocoa, coffee and water. Stir completely and allow to cool. Once cooled add sour cream and vanilla. In separate bowl mix butter till smooth. Then add sugar until fluffy. Add egg until combines. Finally add the flour, baking soda and salt in separate bowl. Add the two bowls of mixtures together alternating until mixed. Once completely mixed add the batter till the three bowls equally and place in over for about 30 minutes. Once cakes are completely cooked, remove from oven and place on wire cooling racks. <br />
For the frosting mix cream, 1/4 cup confectioner's sugar. Mix until peaks form. Now in separate bowl mix the peanut butter and butter. And the remaining confectioners sugar and mix well. To the same bowl add the vanilla and salt and combine for about 5 minutes until light and fluffy. Now gently fold both bowls together. <br />

After the cakes have cooled completely place one of the 3 on a serving platter. Frost in the center, add another layer of cake, frost and the final cake layer. Now frost the side and top of the cake. Decorate the cake if desired. <br />

Take your 6 corn tortilla's and wrap them in a damp paper towel and place in microwave for 30 seconds to soften so they will not break. Once they are soft spray Pam on both sides of them. Sunday brunch? I'm ready for this goodness! I made these this afternoon after church as we lounged around in our PJs watching movies. Unfortunately or fortunately, Noah wanted peanut butter and jelly for lunch instead of these fries. It's unfortunate for him because they were amazing. But fortunate for Shawn and I because I got to use chili powder and jalapenos. Yum! They make the dish!!</div>

~1/2 cup black beans (drained, rinsed, dried)</div>

~1/4 tsp cumin</div>

~1/4 tsp paprika</div>

Preheat oven to 425 degrees. Wash and dry potatoes. Cut potatoes into uniform slices. In large bag mix olive oil and all dry spices and shake bag to evenly coat. Place potatoes on cookies sheet that is sprayed with cooking spray. </div>

One a side note, what do you do with your produce bags once you get your goods home from the market? What do you do with your bags once you've eaten the last piece of bread? I started saving the produce bags and bread bags about a year ago. They are great for marinating meats or coating potatoes and vegetables with spices. Start saving them. They come in very handy.</div>

Cook for 45 minutes turning every 15 minutes. Cook until crispy. The last 5 minutes of baking I turn oven to broil to increase the crispiness of the fries. Time may vary depending on your oven and size of potatoes. </div>

While cooking prepare toppings. Cook and finely chop bacon. Place jalapenos on paper towels to absorb some of the juice. Then run a knife through them. Dice tomatoes. Drain black beans, rinse them and allow to dry.</div>

Preheat oven to 325 degrees. Rinse chicken in water and cut into chunks. In two separate bowls place the beaten eggs in one, and the corn starch in the other. Cover the chicken with corn starch and then place in the eggs. Heat the oil in a skillet. Place the chicken in the pan and heat the chicken till just brown. Do not cook thoroughly. Next place chicken on cookie sheet sprayed with Pam. Mix the ingredients for the sauce together and whisk till mixed. Pour over the chicken and place in oven. Turn the chicken every 15 minutes until cooked, about 45 minutes.</div>

The church filled 26,000 eggs for the hunt. While Noah and I stood at the starting point, Shawn stood in the back hoping not to be trampled. Once the whistle blew it was on....I had told Noah that we were going to run to the back and skip all the eggs in the front. I knew that all the kids would begin collecting in the front. He did pretty well for himself. He collected about 25-30. </div><div class="separator" style="clear: both; text-align: center;">Noah must get some of his weird quirks from myself or Shawn. As you can imagine, with 26,000 eggs to scatter they tend to be pretty much on top of each other. Most kids would stop at a pile with 20 eggs and collect them all right?! No, not Noah. He would stop at a pile of eggs and collect just a few select eggs and move to the next pile. He sure makes me smile. -1/2 cup butter (1 stick)</div>

Squeeze the juice of one lemon into the broccoli.</div>

Soup will begin to thicken. </div>

Baked potatoes, fried potatoes, mashed potatoes and everything in between. Potatoes are okay, but far from my favorite food to prepare, so a few weekends ago I started brainstorming possible creations that would be more enticing for me. What makes a baked potato even better? A baked potato with cream cheese and blue cheese and shredded sharp cheddar cheese. Wash and poke holes with a fork or knife all over the potatoes. Do not cut potatoes until after they have cooked in the microwave.</div><div class="separator" style="clear: both; text-align: center;">Place potatoes on a plate and microwave on high for about 12 minutes, or until soft all the way through.</div><div class="separator" style="clear: both; text-align: center;">Next carefully remove the potatoes from the plate and let cool a few minutes. They are too hot right out of the microwave, but you don't want them to cool so much that they don't melt the butter and cheese.</div><div class="separator" style="clear: both; text-align: center;">After they have cooled a bit cut them in half and scoop out the middles into a large bowl. Be careful not to scoop too much and break the skin on the bottom. With an electric mixer, mix the butter, neufchatel cheese, garlic salt, pepper and salsa together in the large bowl with the potatoes. I was intrigued. I love plants, and although I'm not great at keeping them alive, the few months they last me works with my schedule. I do have a teeny, tiny problem though, I HAVE CATS. Cats eat everything, well at least mine do. No they don't clean up my floor, like the dog. They enjoy nibbling on my plants which either makes them vomit in various areas around the house, OR (it hasn't occurred yet) but kill them. I'm not a fan of either option, so I was excited to see that with a terrarium you put a lid on it.<br />

The article was from the December issue of Better Homes & Gardens so I immediately ran into a problem...there are no succulents for sale in the winter. I learned of this negativity after I had already scoured several Goodwill stores for the perfect home for my succulents. So.....many months later......my succulents are finally in the stores and up for sale. I was thrilled when Shawn texted me last week from Lowe's telling me of this great news.<br />

I got the bigger rocks at the Dollar Store. Noah loaned me his gardening tools. The smaller pebbles are from Wal-Mart in the crafting section. A bag of dirt. When you take your plants out of the containers that they come from in the store in, make sure to gently break up the root system before you place them in the new dirt. Cover the roots with more dirt. Now add you larger rocks and them sprinkle the smaller pebbles to fill in the gaps. Do this slowly so as not to get the little pebbles in the succulents. Noah sprinkled the little pebbles for me and got a few in there. We rented several movies and vegged out on the couch and ate yummy foods. I had seen these on pinterest several week ago, and with Noah's love for chicken I knew I just had to give this recipe a whirl. Results? Delicious!</div><div class="separator" style="clear: both; text-align: center;">3 cups shredded cooked chicken with garlic</div><div class="separator" style="clear: both; text-align: center;">1/4 to 1/2 cup hot sauce (to taste)</div><div class="separator" style="clear: both; text-align: center;">8 ounces cream cheese, softened</div><div class="separator" style="clear: both; text-align: center;">1 3/4 cups sharp shredded cheddar cheese</div><div class="separator" style="clear: both; text-align: center;">4 tbsp sweet salsa</div><div class="separator" style="clear: both; text-align: center;">1 cup all-purpose flour</div><div class="separator" style="clear: both; text-align: center;">4 eggs, lightly beaten</div><div class="separator" style="clear: both; text-align: center;">3 or 4 cups Corn Flakes cereal, crushed</div><br />
<ul><li>Preheat oven to 350˚F. Spray a cookie sheet with Pam.</li>
<li>In a large bowl, combine chicken, cream cheese and hot sauce, cheddar cheese and salsa.</li>
<li>Roll a a large tablespoon of mixture into ball and place onto a plate. Complete this step until all mixture has been used.</li>
<li>In three bowl put flour in one, a eggs in another, and corn flakes in the third.</li>
<li>Dip each chicken ball first into the flour, then the egg and ending with the Corn Flakes. </li>
<li>Put balls on cookie sheet and bake for 20 to 25 minutes. </li>
<li>Can use any of your favorite sauce for dipping.</li>

Don't worry if the shells start to break a little while folding them into the tin.
